Recipe: Spaghetti Bolognese

What you need:

- 1 Courgette Grated

- 1 Carrot Grated

- 1/2 Pepper Grated

- 1 Onion Grated

- 3 Garlic Grated

- 2 Tins of Tomatoes

- 450g Soy Mince

- 1 Bunch Basil

- 2 Tbsp Oil

- 2 Tsp Mixed Herbs

 

Instructions:

 

- Grate all your vegetables into a bowl 

- Heat a sauce pan on a medium heat and add your oil

- Once the oil is hot add your veggies and sauté until all the moisture has evaporated and they have taken on a bit of colour. Evaporating the liquid out of the veg will intensify the flavour 

- Then add your vegan mince (or beef mince) and once again cook on medium high to get some colour and evaporate any moisture

- Sprinkle over your mixed herbs and stir through

- Add the two tins of chopped tomatoes and stir through

- Turn the heat down to medium low and simmer for around 25/30 minutes stirring regularly 

- While your sauce is simmering finely chop your Basil and add it in a few minutes before serving 

- Generously season with salt and pepper and make sure to taste 

- Serve with your choice of pasta. Wholewheat is best if you have it
